Easy Vanilla Latte Overnight Oats recipe. Made with cold brew concentrate, this breakfast idea gets you your coffee and meal all in one bowl.
My first time making overnight oats!
Can you believe that it has taken me this long??? Considering I have a HUGE amount of oatmeal recipes on this blog.
But now that the weather in Chicago is getting warmer (and by warmer, I mean above freezing), let’s celebrate with a cold oatmeal.
I know a lot of people will heat up the overnight oats in the morning, but I decided that I wanted to eat a cold oatmeal.
Topped with cold mangoes.
Do you think this sounds weird? I think it sounds perfect.
And it is so easy to make! All you need is:
- oats
- cold brew concentrate
- milk
- vanilla extract
- maple syrup
- chia seeds
- salt
- toppings of choice
That’s it!
Anyone else craving something cold in the morning during the winter? Just me?

Vanilla Latte Overnight Oats
Ingredients
- 1/2 cup rolled oats
- 2 Tbsp cold brew concentrate
- 1/2 cup milk of choice
- 1 tsp vanilla extract
- 2 tsp maple syrup
- 1 tsp chia seeds
- pinch of salt
Instructions
- Add all of the ingredients into a mason jar. Seal and shake until combined.
- Refrigerate overnight.
- Enjoy hot or cold topped with desired toppings.
