Easy Vegan Cauliflower and Leek Soup recipe. Made with only 7 ingredients, this is a quick and simple weeknight dinner idea.
Last week we had a snow day because of all of the snow that Chicago got Monday night.
Okay, maybe not a “snow day” in the traditional sense. We just had to do Zoom lessons instead of going to school in person.
Gone are the days of having the day off when it snows. Virtual learning is here to stay, and students are still itching to learn! (okay, maybe not all of them..)
So naturally, I have been making soup almost every day since last week.
This Vegan Cauliflower and Leek Soup might be my favourite soup I have made all week.
Honestly, I have always been a sucker for leek soup. But with the addition of cauliflower?? I’m in heaven!
Plus it’s so easy to make. All you need is:
- olive oil
- garlic
- leeks
- salt
- cauliflower
- vegetable broth
- cashews
- nutmeg
That’s it!
I have been alternating between making this leek soup and my other favourite Vegan Instant Pot Lentil Soup, but if I’m being completely honest, this one beats out the lentil soup every time.

Vegan Cauliflower and Leek Soup
Ingredients
- 2 Tbsp olive oil
- 2 cloves garlic, minced
- 1 large leek, chopped (white parts only)
- 1/4 tsp salt
- 1 head cauliflower
- 7 cups vegetable broth
- 1/4 cup raw cashews, soaked
- nutmeg, for garnish
Instructions
- In a large saucepan, heat the oil over medium heat. Cook the garlic, leeks and salt for around 3 minutes. Add in the cauliflower and cook for an additional minute.
- Mix in the vegetable broth and bring to a boil. Reduce heat and allow to simmer for around 30 minutes, or until the cauliflower is tender.
- Mix in the cashews and allow the soup to cool slightly. Pour the soup into your blender in batches, and puree until smooth. Return soup to the saucepan and warm over the stove if needed.
- Ladle into bowls and sprinkle with nutmeg.
