Easy Vegan Chili Mac and Cheese recipe. This comforting pasta dish is a great last minute vegetarian dinner idea.
First day of our road trip today!
I am actually scheduling this post a day earlier because I don’t know when the next time I will have internet to post anything on here.
And also, I really just needed to make sure you get the recipe for this Vegan Chili Mac and Cheese because it needs to happen in your house!
What you need to make Vegan Chili Mac and Cheese
It’s so easy to make so it’s really a no brainer. All you need is:
- oil
- garlic
- onion
- vegan ground beef (I used beyond beef)
- vegetable broth
- crushed tomatoes
- kidney beans
- chili powder
- cumin
- salt and pepper
- macaroni
- vegan cheese
That’s it!
If you aren’t vegan, you can swap in regular cheese, or if you aren’t vegetarian you can use regular ground beef. Switch it up for your preferences, because this recipe is so versatile.
Plus right now I am trying to avoid turning on my oven at all costs. And with this recipe that only involves turning on the stove and is ready in under 30 minutes, I think that this makes a good comfort food recipe without heating your entire house.

Vegan Chili Mac and Cheese
Ingredients
- 1 Tbsp vegetable oil
- 2 cloves garlic, minced
- 1 medium onion, diced
- 1 lb beyond beef
- 4 cups vegetable broth
- 14 oz crushed tomatoes
- 1 1/2 cups cooked (or canned) kidney beans, drained and rinsed
- 2 1/2 tsp chili powder
- 1 1/2 tsp cumin
- salt and pepper to taste
- 10 oz uncooked macaroni elbow pasta
- 1 1/4 cups shredded cheddar cheese (I used daiya vegan cheese)
Instructions
- Heat the oil on medium heat in a large saucepan. Add the garlic, onion and beyond beef, and cook until the ground beef is browned, around 5-8 minutes, making sure to crumble the ground beef while cooking.
- Once the beyond beef is cooked, add in the vegetable broth, tomatoes, kidney beans, chili powder, cumin, salt and pepper. Bring to a boil, then allow to simmer. Mix in the pasta, and cook for an additional 10-15 minutes, or until the pasta is completely cooked. Mix in the cheese.
This seriously is the best comfort food! I love that it is vegetarian. My whole family loved it and we will be adding to our weeknight dinner rotation!

What a delicious version of chili mac. We try to eat meatless every Thursday so this one really hit the spot. I love cumin so added a bit more and it was so tasty!
