Vegan Chocolate, Peanut Butter and Avocado Pie recipe that is gluten free and so quick and easy to make. Rich and fudgy dessert idea.
I have a way to cure Monday blues. And it involves this Vegan Chocolate, Peanut Butter and Avocado Pie!
It’s more like an avocado pudding on top of a prepared (or homemade) gluten free pie crust. The best part about this is how quickly you can go from the raw ingredients to this rich, chocolate pie.
I was looking through my old recipes, and it turns out I have never made a no bake pie before! I have made a no bake cake with only 4 ingredients that turned out amazing, but this pie.. it’s in a league of its own.
It is vegan, gluten free and so rich and fudgy, while being healthy at the same time. Yeah. Can your other recipes say that?
For some reason, I rarely make vegan desserts. I think it’s because I am always drowning in eggs that need using. Which I realize now is my own fault, but after making this pie, I think I will have to reconsider my dessert options.
It is also refined sugar free because I have been trying to cut out the refined sugar in my life the past week. This pie is definitely a good start.
Let’s also talk about how easy this pie is to make. All you need to do is dump all of the ingredients into a food processor, blend until smooth, dump into a pie crust and freeze. You are done!
You can enjoy this from the freezer for a more ice cream like pie or from the fridge for more of a soft, pudding like consistency. Personally, I like it straight from the freezer, but the choice is yours.
