Easy Vegan Mint Nanaimo Bars Recipe. The perfect dessert recipe for St Patrick’s Day, this peppermint version will surely satisfy your sweet tooth.
It’s almost March, which means that St Patrick’s day is just around the corner. Time to make all things green and peppermint flavored.
I was really trying to rack my brain for recipes that I would love to make for Saint Patrick’s Day when my husband requested Nanaimo bars. He requests regular Nanaimo bars at least 3 times a month, and I have a tried and true Nanaimo bar recipe that I have been using for a couple years now.
But this year, I decided to switch things up with these Vegan Mint Nanaimo Bars. Made without a raw beaten egg so that I am still allowed to eat it while I am pregnant.
Vegan Mint Nanaimo Bars Ingredients
You just need a couple of pantry essentials to make these homemade Nanaimo Bars. All you need is:
Bottom Layer:
- sliced almonds
- vegan chocolate chips
- vegan butter
- graham cracker crumbs
- unsweetened shredded coconut
- vanilla extract
Middle Layer:
- icing sugar
- vegan butter
- non-dairy milk (I like coconut milk)
- pudding or custard powder
- peppermint extract
- green food coloring
Chocolate Layer:
- dairy-free chocolate chips
- coconut oil
What is a Nanaimo Bar?
The classic Nanaimo bars come from the city of Nanaimo on Vancouver island in British Columbia. Traditional Nanaimo Bars consist of 3 layers: a base layer made with coconut and nuts, a custard layer and a top layer of chocolate ganache. It is a Canadian classic dessert that is popular year round.
Tips
Storage: Store the Nanaimo bars in an airtight container in the fridge for up to 4 days.
Cutting Nanaimo Bars into squares: If you have a hard time cutting the bars without the chocolate topping cracking, I like to score the tops of the Nanaimo bars with a sharp knife. Then when you want to cut it, bring it to room temperature and cut along the score marks.
Variations
Give these chocolate mint Nanaimo bars an even stronger mint flavor. Instead of using regular chocolate chips for the melted chocolate, try using mint chocolate. It pairs so well with the creamy peppermint flavor in the mint filling.

Vegan Mint Nanaimo Bars
Ingredients
Bottom Layer
- 1/2 cup sliced almonds
- 1/2 cup vegan chocolate chips
- 1/2 cup vegan butter
- 2 cups graham cracker crumbs
- 1 cup unsweetened shredded coconut
- 1 tsp vanilla extract
Middle Layer
- 2 cups powdered sugar
- 1/4 cup vegan butter
- 1-3 Tbsp non-dairy milk
- 2 Tbsp instant vanilla pudding powder
- 1 tsp peppermint extract
- green food coloring
Chocolate Layer
- 4 oz vegan chocolate chips
- 2 tsp coconut oil
Instructions
- In a food processor, pulse the almonds until they look like fine crumbs. Set aside.
- Line an 8 inch square baking pan with parchment paper or aluminum foil. Set aside.
- In a medium saucepan, melt the chocolate chips and butter over low heat, stiring continuously until smooth. Keep an eye on it so that it does not burn. Remove from heat.
- Mix in the graham cracker crumbs, coconut and almonds into the chocolate mixture. Stir in the vanilla. Press the mixture into the prepared baking pan and place in the fridge while you prepare the next layer.
- In the bowl of a stand mixer, cream together the middle layer ingredients until smooth. Spread this layer on top of the bottom layer and place in the fridge to cool.
- In a microwave safe bowl, melt the chocolate layer ingredients in the microwave in 30 second intervals, mixing until smooth. Pour over the middle layer.
- Place in the fridge for 10-20 minutes. Score the top where you want to cut into the bars. Return to the fridge until hardened. Cut along the scores to cut into bars.
