Mine is go grocery shopping. Browsing the aisles, looking for deals, buying new food… My local grocery store is really my therapy.
But these days, I have been too busy to even go shopping for food. Which to me is shocking because I always try to make time. So today, we are going with the pantry essentials in our baking today.
White chocolate chips never used to be pantry essentials at this house!
I was a chocolate snob. Only dark chocolate, and are you kidding me if you think I will try something less than 70% cacao?
It wasn’t until I tried a macadamia nut white chocolate chip cookies (and then subsequently recreated that cookie in oatmeal form) that I found a new obsession in white chocolate.

Don’t believe me that these blondies are easy? All you are going to need is:
- butter
- sugars (white and brown)
- vanilla
- eggs
- flour
- salt
- white chocolate chips
That’s it!
But if you were like me a couple of years ago and don’t have white chocolate chips in your pantry, that is totally fine! Switch it up with whatever you have on hand. This recipe is so versatile. Make it your own!

White Chocolate Chip Blondies
Ingredients
- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 2 tsp vanilla extract
- 2 large eggs
- 1 3/4 cups all-purpose flour
- 1 tsp salt
- 1 cup white chocolate chips
Instructions
- Preheat the oven to 350˚F. Line a 9 inch square baking pan with parchment paper and set aside.
- In the bowl of a stand mixer, cream together the butter and sugars until light and fluffy. Mix in the vanilla. Add in the eggs one at at time, scraping the bowl after each addition.
- Mix in the flour and salt until just combined. Fold in the white chocolate chips.
- Pour the mixture into the prepared baking pan.
- Bake the blondies in the preheated oven for 20-25 minutes, or until golden. The middle should have a slight wobble. Do not over-bake!
- Allow the blondies to cool completely.
- Slice into squares and store in an airtight container.

I can totally relate with browsing grocery store aisles as a form of therapy. I love looking at all the foods, I get so much inspiration from that. And I love finding deals too, and getting creative on how to use it all up! But nothing beats coming back home to a cup of coffee and one of these blondies. Yes, the best way to freeze these is to individually wrap them in plastic wrap then freeze in a freezer bag.
You can freeze them for up to 3 months, but if they are left in an airtight container, they are good for up to a week.

I made this recipe today….OMG, so good! Since I love everything orange flavored, I decided to add the zest of one orange to it before baking. Tastes just like an orange creamsicle!! Delicious!!
