Looks like most people are working from home these days.
I have been teaching my classes from home since Friday and I have actually been loving it. The students seem extremely motivated and really want to learn. Maybe it is because they are bored being cooped up at home all the time, but they are really soaking it all up.
But on the downside.. all of the grocery stores around my house are out of food.
I was expecting the no toilet paper, but no canned food? No pasta? No OIL?
When I was at the grocery store I was SO CLOSE to also stocking up on food as well. But then I thought, I would just be part of the problem. I have enough food at home. I don’t need to buy months worth of food.
So what do I do?
Bake of course! I always have copious amounts of flour and sugar. What better time to put them to use than now?
So I’m using my pantry staples, along with some white chocolate chips and macadamia nuts, to make these White Chocolate Macadamia Nut Brownies.
There are only 10 ingredients that go into making these brownies. And if you don’t have the white chocolate or macadamia nuts? Substitute a mix-in that you DO have. This recipe is so versatile, you can switch it up in whatever way you like.
I absolutely love this combo. Think White Chocolate Macadamia Nut Cookie mixed with a fudgy brownie. I seriously can’t get enough.

White Chocolate Macadamia Nut Brownies
Ingredients
- 1/2 cup salted butter, melted
- 1/4 cup cocoa powder
- 2 large eggs, lightly beaten
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 3/4 cup all-purpose flour
- 1/2 tsp salt
- 1/4 tsp baking powder
- 1/2 cup white chocolate chips
- 1/4 cup macadamia nuts, chopped
Instructions
- Preheat the oven to 350°F. Line an 8x8 baking pan with aluminum foil and lightly grease. Set aside.
- In a large bowl, mix together the butter and cocoa powder. Add in the eggs, sugar and vanilla, and mix until just combined.
- In a separate bowl, mix together the flour, salt and baking powder.
- Slowly mix in the dry ingredients into the wet ingredients until just combined. Fold in the white chocolate and macadamia nuts.
- Pour the batter into the prepared pan and bake in the preheated oven for 25-30 minutes. Allow to cool completely in the pan before cutting into squares.
