Hello quick grab and go breakfast for the week! How are you doing?
Is it cheating when I say that I have been eating my greens all week for breakfast? All in the form of this white chocolate matcha bread, of course.
It actually didn’t last all the way to the end of the week. Leaving John home alone with my baking means that it is usually gone within 2 days, max.
Man, I am going to miss him next year. After our wedding, we are going our separate ways: I will stay in Toronto, and John will move back to Vancouver to do his post doc. Obviously I am super excited for him, but.. who is going to help me eat all of my baking creations??
I guess I can give it to my students..
But with this bread, I think I can handle eating all of it by myself. It isn’t very sweet, which makes it great for breakfast. Now I can avoid my mid-day sugar crashes from when I eat my chocolate marshmallow layer brownies for breakfast.
Even though those sugar crashes are SO worth it for those brownies!
But I am currently having a short break from eating chocolate. Mainly because I ran out of chocolate chips last week. And since I have a baking addiction, I needed to work with what I had on hand.
But with this matcha bread, I don’t miss chocolate at all. Super easy to make, and almost tastes like a pound cake but lighter. I am always on board for healthier options of my favourite desserts.
But don’t worry. You can bet that I will be buying some chocolate chips soon. Like, tomorrow soon.
What you need to make White Chocolate Matcha Bread
- flour
- cornstarch
- baking powder
- matcha
- salt
- yogurt
- sugar
- oil
- eggs
- vanilla
- white chocolate chips

White Chocolate Matcha Bread
Ingredients
- 1 1/2 cups all-purpose flour
- 3 Tbsp cornstarch
- 1 tsp baking powder
- 1 Tbsp matcha powder
- 1/4 tsp salt
- 1 cup plain yogurt
- 3/4 cup granulated sugar
- 1/2 cup vegetable oil
- 3 large eggs
- 2 tsp vanilla extract
- 3/4 cup white chocolate chips
Instructions
- Preheat the oven to 350˚F. Spray a loaf pan with cooking spray and set aside
- In a large bowl, mix together the flour, cornstarch, matcha, baking powder and salt.
- In a separate bowl, whisk together the yogurt, sugar, vegetable oil, eggs and vanilla until fully combined.
- Stir in the wet ingredients to the dry ingredients until fully combined. Fold in the white chocolate.
- Pour the batter into the prepared pan and bake for 50-55 minutes, or until a toothpick inserted comes out clean.
- Let cool in the pan for 20 minutes, then remove to cool completely on wire racks.
i would use dark chocolate for myself
