These White Hot Chocolate Cookies combine chewy cookies with big gooey marshmallows on top of each cookie. The perfect holiday cookie.
I have been baking Christmas cookies almost every day this week. Cookie baking paired with a cup of hot chocolate is the best combo in my opinion. And these gooey hot chocolate cookies combine the best of both worlds into a delicious treat.
Last night, me and my husband took our two kids to the zoo to see the lights. My 3 year old’s favorite part was riding the carousel and drinking a cup of hot cocoa. Usually when we make him a mug of hot chocolate, we mix together warm whole milk and unsweetened cocoa powder. So the sweetened one from last night was an extra special treat for him.
And since he enjoyed the hot chocolate so much, I decided to make some cookies with hot chocolate mix in them. These White Hot Chocolate Cookies are the perfect way to enjoy hot chocolate in cookie form. I am already thinking of adding some of these cookies for my holiday cookie exchanges. They disappeared so quickly in my house, I am going to have to do a double batch so that we can enjoy them again.
White Hot Chocolate Cookies Ingredients
This white hot chocolate cookie recipe is made with minimal ingredients. All you need is:
- unsalted butter
- white sugar
- large egg
- white hot chocolate mix
- all purpose flour
- baking powder
- large marshmallows
Tips
Storage: Store any leftover cookies in an airtight container at room temperature for up to 1 week. The marshmallow half will harden when cold. If you want a soft marshmallow, just microwave the cookie for around 5 seconds.
Switch up the hot cocoa mix. I love the white chocolate hot cocoa flavor, but you can use whatever flavor you like! If you want a rich chocolate cookie, you also love using dark chocolate hot cocoa mix.
Dip the bottoms of the cookie in melted chocolate. One of my favorite ways to elevate these delicious hot cocoa cookies is to dip them in chocolate. Melting some white chocolate chips works best for this recipe, but semi-sweet chocolate chips or milk chocolate chips work well too.

White Hot Chocolate Cookies
Ingredients
- 1/2 cup unsalted butter
- 1/2 cup granulated sugar
- 1 large egg
- 1/4 cup white hot chocolate mix
- 1 1/4 cup all purpose flour
- 1/2 tsp baking powder
- 8 large marshmallows
Instructions
- Preheat the oven to 350℉. Line 2 baking sheets with parchment paper and set aside.
- In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg.
- In a separate bowl, mix together the hot chocolate mix, flour, and baking powder until fully combined.
- Slowly mix the dry ingredients into the butter mixture until fully incorporated.
- Using a cookie scoop, scoop the cookie dough onto the baking sheets.
- Cut each marshmallow in half. Place the marshmallow sticky side down on each cookie and press down until the cookie flattens into a round disk.
- Bake the cookies in the preheated oven for 10 minutes. Set your oven to broil and broil the cookies for around 30 seconds, or until the marshmallows are golden brown. Make sure you keep an eye on them so that they don't burn!
- Allow the cookies to cool slightly before eating.
Notes
- You can reheat cold cookies in the microwave for around 15 seconds to soften the marshmallow again.
