Healthy Whole Wheat Banana and Date Muffins recipe that are moist and super easy to make. Made with oats, bran and chocolate chips, they make a great grab and go breakfast idea.
Happy Monday all! It is actually a very happy Monday for me because today is the last day of exams for my students. Which means that all I need to do now is mark exams and write report cards. A task that is actually quite daunting and arduous, but this is the last big push until the holidays. So I am pretty okay with it.
More okay with it when I have some snacks beside me while I mark. Snacking is the only thing that gets me through the days and nights spent marking exams. So this time, I am trying to keep it healthy with these muffins.
I am not typically a date eater. In fact, the first time that I have ever had a raw date was exactly 3 days ago. But for some reason, on a late night Amazon shopping spree, I bought a 1 kg bag of dates.
Is it just me, or is it really easy to impulse buy items on Amazon? When the box came in the mail, I was genuinely surprised by some of the things that I bought. Like a 1 kg bag of intense sour gummy cola bottles.
Surprised, but not disappointed in the least.
But now with my 1 kg bag of dates, I will need to get creative with my baking. Or make energy balls every week, but where is the fun in that?
The current situation in the date baking front has been these date chocolate chip cookies, these dates brownies, these dates squares and now these muffins.
What do you need to make these Whole Wheat Banana and Date Muffins?
- dates
- whole wheat & all-purpose flour
- wheat bran
- oats
- baking powder
- baking soda
- cinnamon
- salt
- bananas
- eggs
- coconut oil
- maple syrup
- vanilla extract
- chocolate chips
- coarse sugar
Even though the list of ingredients for these Whole Wheat Banana and Date Muffins is a lot longer than my typical recipe list, the majority of the ingredients are probably lying around in your pantry at the moment anyways. Also, you get a healthy breakfast out of making this recipe. So it is a win all around.
Personally, I like the look of the oats and coarse sugar on top of the muffins, but that is totally optional and 100% for the ascetics of these muffins when photographed.
One of the examples of moments when I eat for the ‘gram. Or I guess, in this case, eat for the blog. But let’s be honest here, who doesn’t style their baking in a certain way to make it look prettier?
These muffins saved my butt these past couple of weeks. With my students freaking out about their exams, I have been waking up at 5 AM to help my students out for the full day. Then come home at 8 PM and repeat the next day. I had about zero time to make breakfast.
So I have been grabbing a couple of these Whole Wheat Banana and Date Muffins as I headed out the door in the mornings this week, making a quick stop at Starbucks on the way for mandatory coffee. These muffins are saving me from having to buy overpriced baked goods at Starbucks. Plus, they are probably healthier than anything you can buy from their breakfast foods section anyways.

Whole Wheat Banana and Date Muffins
Ingredients
- 1/2 cup dates
- 1 cup boiling water
- 1 1/3 cup whole wheat flour
- 2/3 cup all-purpose flour
- 1/4 cup wheat bran
- 1/4 cup old fashioned oats
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 3 medium bananas, ripe
- 2 large eggs
- 1/4 cup coconut oil, melted
- 1/2 cup maple syrup
- 1 tsp vanilla extract
- 1/2 cup chocolate chips
- coarse sugar
Instructions
- Preheat the oven to 350˚F. Line a muffin pan with paper liners and set aside.
- In a small bowl, soak the dates in water for at least 5 minutes.
- Meanwhile, in a medium bowl, mix together the flours, wheat bran, oats, baking powder, baking soda, cinnamon and salt. Set aside.
- Place the bananas, eggs, coconut oil, maple syrup, vanilla and soaked dates in a food processor and pulse until smooth.
- Add the wet ingredients to the dry ingredients, and mix until just combined. Fold in the chocolate chips.
- Divide evenly in the prepared muffin pan and top with coarse sugar and additional oats, if desired.
- Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted comes out clean.

What an ideal snack or treat to have on hand. I get grumpy when I’m hungry so these muffins would be great. When I’m busy I don’t like to stop, either. Dates and bananas are a great combination and the whole wheat adds a little bit better flavor to the muffins. Will be pinning the recipe.
