Healthy Whole Wheat Banana Applesauce Pancakes made with chia seeds. This recipe is a very filling breakfast idea, and a great way to use up 2 ripe bananas.
Raise your hand if you eat pancakes for dinner? 🙋 I think the word “brinner” was created for us. The night time pancake eaters. The ones who adore all day breakfast, and can be found in a Denny’s eating pancakes at all hours of the day and night.
Well, I finally stopped making my regular Sunday Morning Pancakes in favour of this whole wheat, healthy version of pancakes.
And I mayy be switching it up more regularly to make mornings more wholesome. At least, until the wedding. Maybe.
Side note, I am curious. What side are you on? Do you prefer pancakes or waffles?
It is a hard choice for me. The only reason I don’t make waffles at home is because I don’t have a waffle iron.
Not that I don’t want one. I go window shopping on Amazon for them all the time. But in my tiny kitchen, I really don’t have enough room for one. So I compromise: when I go out for breakfast, I will typically get waffles. At home, I am all about the pancakes.
These Whole Wheat Banana Applesauce Pancakes really came about by me trying to use up all of my extra ingredients that I am finding around the house. If I am going to be moving to a new place next year, I should probably eat all the food in my cupboards. Last week it was root beer with my root beer muffins and my dijon mustard with my honey dijon salmon.
Today, I found bags upon bags of chia seeds in my cupboards. Time to add chia seeds to everything from now on!
And now that summer is here, my bananas are getting brown so quickly that I am going to need a lot of recipes to use them up. Pancakes are usually my go-to recipe for using up bananas.
These Whole Wheat Banana Applesauce Pancakes certainly aren’t restaurant worthy by any means. They aren’t perfectly circular, and are brown and lumpy. Never something you would serve to a paying customer. But I think that they look perfectly imperfect. And I’m getting in some extra fibre and fruits, so this makes my breakfast so much healthier than a morning cupcake.
Which is what my weekdays have looked like almost every day this month. So I say, bring on the healthy chia seed pancakes!

Whole Wheat Banana Applesauce Pancakes
Ingredients
- 1 large egg
- 1 cup milk
- 1/2 cup applesauce
- 1 tsp vanilla extract
- 3 Tbsp chia seeds
- 2 Tbsp maple syrup
- 2 Tbsp salted butter, melted
- 1 1/2 cups whole wheat flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 2 large bananas, mashed
Instructions
- In a small bowl, mix together the egg, milk, applesauce, vanilla, chia seeds and maple syrup. Set aside for around 5 minutes to allow the chia seeds to absorb some of the liquid.
- In a medium bowl, mix together the flour, baking powder, salt and cinnamon.
- After 5 minutes are over, mix the wet ingredients into the dry ingredients until fully incorporated. Mix in the bananas.
- Heat some oil or butter in a skillet on medium heat. Scoop 1/4 cup of batter onto the hot skillet and flatten with a rubber spatula to ensure they cook evenly. Cook until bubbles appear on the top. Flip the pancake over, and cook the other side for an additional minute, or until the side is golden brown.
- Repeat with the remaining batter.
