Lightly spray two cookie sheets and set aside. Preheat the oven to 350˚F.
In a large bowl, cream together the butter and sugars until light and fluffy. Beat in the eggs and stir in the vanilla until fully incorporated.
In a separate bowl, mix together the flours, cornstarch, baking soda and salt.
Slowly mix in the dry mixture to the wet ingredients and mix until fully combined.
Fold in the chocolate chips and oreos.
Scoop dough unto the prepared cookie sheets and bake for 10-12 minutes.
Remove from the oven and let cool for 5-10 minutes on the cookie sheets. Transfer to wire racks to cool.
