Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt
  • 1/2 cup salted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup canned pumpkin
  • 1 large egg
  • 1 tsp vanilla extract

Instructions

  • Preheat the oven to 350°F. Line 2 baking sheets with parchment paper and set aside.
  • In the bowl of a stand mixer, mix together the butter and sugar until light and fluffy. Mix in the egg and vanilla.
  • In a separate bowl, mix together the flour, baking powder, baking soda, cinnamon, nutmeg and salt. Slowly mix into the wet ingredients until fully combined.
  • Using a medium cookie scoop, scoop the cookie dough onto the prepared baking sheets and bake in the preheated oven for 15 minutes, or until the edges are golden. Allow to cool on the baking sheets for around 5 minutes before transferring to wire racks to cool completely.
