Ingredients

  • 3 cups rolled oats
  • 2/3 cup brown sugar, packed
  • 1/3 cup all-purpose flour
  • 1 tsp ground ginger
  • 2 tsp baking powder
  • 1 tsp salt
  • 2 large eggs
  • 2 cups milk of choice
  • 1/4 cup oil
  • 1 tsp vanilla extract
  • 2 medium peaches, diced

Toppings

  • 1/4 cup plain yogurt
  • 1 Tbsp coconut chips

Instructions

  • Preheat the oven to 350˚F. Lightly grease a 9×13 inch baking dish and set aside.
  • In a medium bowl, whisk together all of the ingredients, except the peaches. Gently fold in the diced peaches and pour into the prepared baking dish.
  • Bake in the preheated oven for 25-30 minutes, or until set in the middle. Cut into squares, and top with yogurt and coconut chips, if desired.

Notes

  1. This oatmeal also tastes great with nectarines instead of peaches.
  2. Nutritional information is approximate, and depends on what brands you are using as well as the freshness of your ingredients.
  3. I use avocado oil in this recipe, but any neutral oil works.
