Preheat the oven to 350˚F. Lightly spray an 8x8 baking pan.
Sprinkle the brownies, shredded coconut and chocolate chips evenly in the prepared baking pan. Set aside.
In a medium bowl, whisk together the coconut milk, vanilla extract and eggs until fully combined. Pour over the brownies.
Bake in the preheated oven for 30 minutes. Top with vanilla ice cream, if desired.
