Place the oreos in a food processor and crush until you are left with fine crumbs.
In a medium bowl, mix together the cream cheese and the cookie crumbs until well combined.
Form into eggs and place on a cookie sheet lined with wax paper. Freeze for at least 15 minutes.
In a microwave safe bowl, melt the chocolate chips and coconut oil in 30 second intervals, mixing until smooth.
Take the oreo eggs out of the freezer and dip them in the chocolate mixture. Place the dipped oreo eggs back on the wax paper, then freeze until hard.
