In a large bowl, mix together the Greek yogurt, milk and baking powder until smooth. Beat in the eggs one at a time until fully incorporated. Mix in the vanilla, butter and sugar.
Mix in the flour until just combined. Fold in the strawberries.
Heat a medium skillet over medium heat and spray with cooking spray. Scoop 1/4 cup of the batter for each pancake and flip when bubbles are covering the surface of the pancakes. Flip and cook the other side until it is golden. Repeat for the remaining pancakes.
